Cheesy courgette boats
- 4 medium courgetteszucchini, summer squashX (also called zucchini), halved
- 1 large carrot, grated
- 100g shaved lean ham, finely chopped
- 4 tablespoons grated tasty cheese
1 Preheat oven to 180ºC. Scoop out courgette flesh. Set aside.
2 Place a single layer of courgette ‘boats’ in a baking paper-lined oven dish. Fill boats with carrot, courgette flesh and ham. Top with grated cheese.
3 Bake for 30 minutes or until cheese is melted and courgette is cooked through. Let cool for 5 minutes. Serve with carrot sticks, cherry tomatoes and crusty bread.
