- 500g chicken thighs, cut into strips

1 Blend corn chips in a food processor. Beat eggs.
2 Dip cubes of meat in egg, then coat in corn chip crumbs.
3 Shallow fry until golden and cooked through. Drain on paper towel before serving.
You can replace the chicken with any meat, fish, tofu or veges, such as courgette strips.
