Variations

  • Make it gluten free: Use a gluten-free bread with seeds
  • You can replace the spring onion with a tablespoon of freshly chopped herbs like parsley, or 1/2 teaspoon dried oregano.
  • Want to make it even healthier? Line the mug with fresh spinach leaves before you put in the bread.
  • If you don’t have fresh tomatoes, you can use a sliver of sundried tomato or a teaspoon of tomato sauce.
  • A slice of sourdough bread also works well in this recipe.
