Pancake snowman

Christmas is getting closer so it’s time for snowmen – even though we’re hoping for sunshine!

Here’s a simple pancake snowman that’s a perfect breakfast, snack or dessert.

Recipe

Ingredients

  • pancake (I make with wholemeal flour, eggs and milk)
  • plain yoghurt (or coconut cream)
  • raisins (or blueberries)
  • strawberry (or red apple)
  • apricot (or slice of orange)
  • desiccated coconut (optional)

Method

Step 1 Cut three circles from the pancake each a little larger than the first. Slice a little semi-circle into the top of the two larger circles so they all slot together.

Step 2 Cover with yoghurt.

Step 3 Sprinkle with coconut.

Step 4 Add three raisin buttons.

Step 5 And some raisin eyes.

Step 6 Thin strips of strawberry make an excellent scarf.

Step 7 Cut him a jaunty hat.

 

Step 8 Then slice a little off his head so it fits snugly.

 

Step 9 Make some stick arms from pancake.

Step 10 And give him a nose from apricot and a smile from a slice of raisin.

Step 11 A bit more yoghurt for the snow around him.

Step 12 Finishing off with a snowfall of desiccated coconut.
