1½ cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup trim milk
2 large eggs, lightly beaten
1 In a large mixing bowl, sift together flour, baking powder and baking soda. Add sugar and salt. Whisk in milk and eggs until just combined.
2 Spray a non-stick pan with oil and set over a medium heat (not too hot or you’ll burn your pancakes). Add about 1/4 cup of pancake mixture to the pan. Wait until bubbles form then carefully turn over. Repeat for the rest of the mixture.
