What is it?
Kombucha is a fermented tea that is very slightly effervescent. We’re hearing a lot more about fermented foods and drinks these days as it appears the probiotics they contain are beneficial to our gut bacteria.
Buy or make it
Kombucha is available in a wide variety of flavours, but you can also make it yourself. You’ll first need a SCOBY (Symbiotic Culture of Bacteria and Yeast) starter. This slimy, jelly-like culture, when added to sugary tea (green or black), provides the probiotics during the fermentation process. The great thing about a SCOBY culture is that once you have it, you can keep reusing it.
