
These tasty meals can be whipped up in no time at all, and are sure to keep your taste buds happy!
1. Super-quick steak sandwich
Top long slices of grainy bread (I like Vogel’s) with light mayonnaise and pesto. Add sliced steak which has been quickly grilled, fresh tomatoes, and a bit of your favourite relish, like beetroot. Serve with simple coleslaw.
2. Chicken noodle soup
Bring chicken stock to the boil. Add thinly sliced chicken breast, mushrooms, beans and frozen peas. When boiling again, add dried noodles and cook until tender. Season with white pepper and a squirt of lemon or lime juice.
3. Asparagus and feta salad
Steam or microwave sliced asparagus. Combine in a large salad bowl with mesclun leaves, crumbled feta cheese and chopped tomatoes. Make a simple dressing with olive oil, whole grain mustard and lemon juice. Serve with grilled meat or fish.
4. Salmon and lemon pasta
Drain a can of salmon in spring water. Add to cooked pasta (I like penne) with lemon zest, rocket leaves, broad beans (take the pods off) and peas. Drizzle with a little olive oil and add fresh herbs like mint, parsley and basil.
5. Quick roast chicken dinner
Cut agria potatoes in small cubes. Put in an oven dish, spray with olive oil, and sprinkle rosemary leaves over the top. Place skinless chicken breasts that have been rubbed with garlic and lemon on top. Bake in a hot oven for 30 minutes. Serve with green beans.
