Strawberries-and-cream ice cream

Here’s a wonderful way to make a delicious, healthy frozen dessert super-fast!

This delicious ice cream has three ingredients and a fraction of the sugar and fat you’d find in bought ice cream. The bananas create creamy texture without cream, and it’s easily adapted to a dairy-free option. Kids love it and can make it themselves, and you can vary the fruit – just use your imagination and what’s in season. The Vitamix is so powerful this takes just seconds to do.

Strawberries-and-cream ice cream

Serves 6 (makes 6 scoops)
Time to make: 1 minute (plus freezing, if needed)

1/2 cup low-fat vanilla yoghurt
4 medium bananas, sliced in chunks, completely frozen
1 1/2  cups frozen strawberries
1 tablespoon sugar (optional – taste for sweetness!)

Step 1 Place all ingredients (except sugar) in Vitamix. Blend on high for about 45 seconds, tampering down well, until bananas form a soft ice cream consistency.

Step 2 Taste and add sugar if needed. Serve immediately or place in a freezer-proof container and freeze for 1 hour before serving.
