Niki’s mixed nut butter

Here’s a great idea: your own fresh nut butter, completely natural and with no additives or salt. In the Vitamix you can do this in seconds.

This mixed nut butter has lots of delicious flavour and is economical to make. You could vary it with your own combinations – try different seeds and nuts together for interesting flavours.

Niki’s mixed nut butter

Makes about 1 cup
Time to make: 1 minute

1/2 cup roasted unsalted peanuts
1/2 cup roasted unsalted cashews
1/2 cup roasted unsalted almonds
2 tablespoons LSA pinch salt

Step 1 Combine all ingredients in the Vitamix and turn on to low. Increase to maximum power and use the tamper to push down if needed. Blend until desired consistency is reached – for smooth, blend a little bit longer.
