Pepper and sesame-crusted salmon with mint peas

  • 2 tablespoons sesame seeds
  • 1-2 teaspoons finely ground black pepper
  • 4 x 100g skinless salmon fillets
  • 1 cup frozen peas
  • 250g green beans, trimmed, sliced
  • 1 small red onion, finely sliced
  • ½ cup torn mint leaves
  • 40g feta cheese, crumbled
  • lemon wedges, to serve
  • 4 baked potatoes

    1 Combine sesame seeds and pepper on a sheet of baking paper. Press salmon fillets into seed mixture to coat all sides.

    2 Spray a large non-stick frying pan with oil and set over a high heat. Add salmon and cook each side for 2-3 minutes or until golden and just cooked through. Remove pan from heat, cover to keep warm and set aside.

    3 Place peas and beans in a medium-sized heatproof bowl and cover with boiling water. Leave to stand for 2 minutes then drain.

    4 Combine peas and beans with onion, mint and feta in a large bowl. Divide mint peas among serving plates, top each with a reserved salmon fillet and serve with lemon wedges and potatoes.
