Zucchini and haloumi fritters with tahini sauce

Golden, crispy and made for dipping! These fritters are loaded with colourful veg and fresh dill, with a creamy tahini-yoghurt sauce on the side for an extra hit of flavour.

Ingredients

  • 2 zucchini/ courgettes, grated
  • 1 yellow long pepper or capsicum, finely chopped
  • ½ red onion, finely chopped
  • ¼ cup fresh dill leaves, chopped, plus extra leaves to serve
  • 150g reduced-salt haloumi, grated
  • 2 eggs, lightly whisked
  • ½ cup buckwheat flour
  • 2 tablespoons olive oil
  • 6 cups green salad leaves, to serve
    •  
    • Tahini sauce:
    • ¼ cup tahini
    • ¹⁄³ cup Greek-style yoghurt

    1 Place grated zucchini in a clean tea towel and press to remove all the excess liquid.

    2 In a large mixing bowl place zucchini, capsicum, onion, dill and haloumi. Mix to combine. Season with cracked pepper.

    3 Add eggs and flour and stir to combine.

    4 Heat oil in a non-stick frying pan over medium heat. Add 2 heaped tablespoons of the mixture for each fritter. Fry on each side for 4-5 minutes or until golden brown and crispy. Repeat to use all batter.

    5 In a small bowl combine tahini and yoghurt.

    6 Serve fritters with salad leaves, tahini sauce and extra dill.

    HFG tip

    Try mint or parsley leaves instead of dill.

    If the tahini is too thick, combine with a little warm water to thin.
