Apricot and cardamom cookies

  • 1 cup oats
  • 1 cup flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ½ cup desiccated coconut
  • ¾ cup caster sugar
  • ¼ cup chopped nuts
  • ¼ cup dried apricots, finely chopped
  • 1 teaspoon baking soda
  • 4 tablespoons golden syrup
  • ½ cup canola oil
  • 1 egg, lightly beaten

    1 Preheat oven to 160°C. Line 2 baking trays with baking paper.
    2 In a large bowl, place the oats, flour, spices, coconut, sugar, nuts and apricots.
    3 In a small jug, place the remaining ingredients and whisk to combine. Add to the dry ingredients and stir well.
    4 Shape mixture into small balls. Flatten with a fork. Bake for 15 minutes until light golden. Cool. Store in an airtight container for up to 4 days.
