Lamb and watermelon salad skewers

These lamb and watermelon skewers are the ultimate light bite – smoky lamb, sweet watermelon, creamy feta and a pop of mint.

  • 12 small skewers
  • 200g lamb leg steaks
  • 1 teaspoon smoked paprika
  • 1 teaspoon olive oil
  • 12 even-sized cubes watermelon (about 1½ cups)
  • 1 small Lebanese cucumber, sliced into 6 then halved
  • 100g feta, cut into 12 cubes
  • 12 fresh mint leaves
  • balsamic glaze, to garnish (optional)
  • cracked black pepper, to serve

    1 In a shallow dish, place lamb steaks and rub over smoked paprika and 1 teaspoon of the oil. Heat a heavy-based pan over high and cook steaks for 2-3 minutes each side, or until cooked to your liking. Remove from heat and set aside to rest. Slice into 12 long strips.

    2 Thread a watermelon cube onto each skewer. Follow with a mint leaf, folded lamb slice, feta cube and cucumber wedge.

    3 Serve on a platter, drizzled with balsamic glaze and cracked pepper.
