Boss burgers and baked veges

  • 2 heads broccoli, cut in florets
  • 2 capsicums (red and yellow look great), cut in 2cm-wide strips
  • 200g mushrooms, halved
  • freshly ground black pepper
  • spray oil
  • 2 x 400g cans four bean mix
  • 1 lemon, rind and juice
  • 100g sundried tomatoes
  • 1 teaspoon allspice
  • 2 tablespoons flour
  • large handful coriander, chopped
  • 1 tablespoon olive oil
  • ½ cup lite sour cream
  • 2 teaspoons sweet chilli sauce

    1 Preheat oven to 180°C fanbake. Place broccoli, capsicum and mushrooms on a large oven tray. Season with pepper and spray with oil. Bake in oven until soft.

    2 While veges are cooking, drain beans and place in a food processor with lemon rind, sun-dried tomatoes, allspice, flour and coriander stalks (keep leaves). Blend until smooth, scraping down the edges so everything is well combined. Using wet hands, divide bean mix into 8 even-sized patties, about 2cm thick.

    3 Heat oil in a large frying pan on a medium-high heat. Add patties and cook for 5-10 minutes on each side until golden.

    4 In a small bowl combine sour cream, sweet chilli and lemon juice. Serve bean patties alongside the roast veges with sour cream sauce and garnish with coriander leaves.
