    Instructions

    (Stops screen from sleeping)

1 Preheat oven to 180° fan-forced and line a 6-cup capacity loaf tin with baking paper.

2 Place oranges in a small pot and just cover with water. Bring to the boil, then reduce heat and simmer for 15 minutes. Remove from water, set aside to cool.

3 Place all ingredients, including intact boiled orange (but not the yoghurt), in a food processor and blitz until combined. Do not overmix.

4 Transfer mix to the lined loaf tin and bake for 35–40 minutes, or until a skewer comes out clean when inserted.

5 Allow to cool slightly before turning out onto a rack or serving plate. Serve warm or cold with a dollop of yoghurt.

    HFG tip

HAVE YOUR CAKE — AND VEG IT!: Don’t let the idea of putting veg into your cake put you off — slipping a little in is the perfect way to lift the nutrient content of your favourite homemade treat while losing none of the much-loved flavour.
