Hot and saucy brownie pudding

This recipe can be made into individual pots or as a one-dish pudding - a great way to end a dinner party.

  • cooking spray oil
    • 1 cup unsweetened apple sauce
    • ⅓ cup cocoa
    • ¾ cup self-raising flour
    • ½ teaspoon baking soda
    • ½ cup sugar
    • ½ teaspoon salt
    • ½ cup dark chocolate chips
    • ¾ cup (70g) walnuts, chopped
    • Sauce
    • ⅓ cup brown sugar
    • 3 teaspoons cornflour
    • 3 tablespoons cocoa
    • 2 cups boiling water

    1 Preheat oven to 175°C. Lightly spray a 20x20cm baking dish.

    2 Place apple sauce in a medium-sized bowl. Sift in cocoa, flour and baking soda. Add sugar and salt. Mix until just combined. Do not over-mix as this will toughen the pudding. Gently fold in chocolate chips and walnuts. Transfer to prepared baking dish.

    3 To make sauce, mix brown sugar, cornflour and cocoa together. Sprinkle over brownie batter. Pour boiling water over top. Bake for about 30-35 minutes, or until centre feels set and fudgy when a skewer is inserted.

    4 Cool in pan for 5-10 minutes before turning out onto a flat plate or tray. Serve immediately with thick yoghurt or reduced-fat ice cream.

    Serving suggestion

    Purée a can of raspberries or boysenberries to serve as a delicious sauce on the side.

    Variations

    Make 8 individual puddings in miniature ovenproof bowls. Cook for 20-25 minutes. Serve in bowls with a sprinkling of icing sugar and a sprig of mint.
