Ricotta and slow-roast tomato toasties

Change-up your traditional cheese and tomato toasties with this ricotta tomato and spinach combo.

  • 4 wholemeal bread slices
  • 1/2 cup low-fat ricotta cheese
  • 50g slow-roasted tomatoes, sliced
  • 1 1/2 cups baby spinach

    1 Grill each bread slice on one side. Spread 2 of the slices with ricotta on the ungrilled side. Top with the slow-roasted tomatoes and the spinach, then add the remaining bread slices, grilled side up.

    2 Slice each sandwich in half to serve.
