

Steamed veg with sautéed onion, garlic, lemon and tarragon dressing
Ingredients
- 4 tablespoons extra-virgin olive oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- Finely grated zest and juice 1 lemon
- 2 tablespoons chopped fresh tarragon
- 500g leeks, sliced
- 350g broccoli, separated into florets, thick stems sliced
- 250g frozen peas

Instructions
1 Half fill a large pan with water and set over a medium heat to boil. Meanwhile, make the dressing. Heat 1 tablespoon oil in a medium non-stick frying pan over a medium heat, add the onion and stir-fry for 10 min, then add the garlic and cook for 2–3 min. Tip into a large serving bowl and stir in the lemon zest and juice with the tarragon and remaining oil. Season to taste with freshly ground black pepper.
2 When the water is just boiling, sit a colander or steamer over it (don’t allow it to touch the water). Add the sliced leeks and broccoli florets and stems. Cover and steam for 3–4 min, in batches if necessary, until just cooked but still crunchy. Remove the steamer basket, add the peas to the water in the pan, return to the boil and cook for 1 min. Drain. Tip the steamed veg and peas into the bowl that contains the dressing, then toss well and serve.
