Strawberry ice

  • 3 tablespoons custard powder
  • 3 tablespoons castor sugar
  • 575ml skim milk
  • 500g strawberries, sliced
  • 1 lemon, juice
  • 2 x 150g tubs fromage frais (we used Frûche vanilla créme)

    1 Mix custard powder and sugar together with 6 tablespoons of milk. Heat remaining milk in a pan. Pour over blended custard and mix. Return to pan and heat until thickened. Leave to cool.

    2 In a blender, process strawberries with lemon juice until smooth.

    3 Stir in cooled custard with fromage frais. Place in a container and freeze until partially frozen at the sides.

    4 Use an electric mixer to whisk frozen parts into softer parts, then freeze once more for 2-3 hours.

    5 Serve with a fresh mint garnish and strawberries.
