Pear, quinoa, date and vanilla slice

  • 1 cup dried, pitted dates
  • ½ cup boiling water
  • 1 cup ground almonds
  • 2 cups cooked quinoa
  • 2 pears, deseeded, roughly chopped into chunks
  • ¼ cup liquid honey
  • 2 teaspoons vanilla extract
  • ⅓ cup coconut threads
  • zest of lemon lemon ½ lemon

    1 Preheat oven to 180°C and line a square baking tray (20.5cm x 20.5cm x 4.5cm) with non-stick baking paper.

    2 In a small bowl place dates and boiling water and set aside to soak for 10 minutes.

    3 In large bowl, combine remaining ingredients and mix well.

    4 In small food processor, blitz dates and water until a smooth paste is formed. Add to mixture and combine. Pour into tray and bake for 1 hour, until golden brown on top.

    5 Remove from oven and carefully remove slice from tray (use baking paper to lift it out) and place onto a wire rack. Leave to cool and slice into 20 pieces. Store in an airtight container for up to 3 days.
