Fast fattoush with lamb

  • For the lamb
  • 1 lamb steak, trimmed of fat
  • 1 clove garlic, crushed
  • ½ teaspoon cumin
  • squeeze lemon juice
  • For the salad
  • 1 stalk celery, finely chopped
  • 1 large ripe tomato, chopped
  • 1 tablespoon chopped red onion
  • 1 clove garlic, chopped
  • 1 handful each fresh mint, parsley and coriander, chopped
  • 1 big squeeze lemon juice
  • 1 teaspoon olive oil
  • salt and pepper

    For the lamb

    1 Combine garlic, cumin and lemon juice and rub into and over the lamb. Set aside to marinate while you assemble the salad.

    For the salad

    2 Combine the celery, tomato, onion and garlic in a bowl and add the mint, parsley and coriander. Season with lemon juice, oil, salt and pepper and add more or less herbs or seasoning to suit your taste. Lightly oil a pan or grill plate and cook the lamb for 2 minutes on either side. Set aside to rest for a moment while you warm the pita bread. Slice the lamb thinly and pile onto the salad.

    3 Eat with warmed pita bread.

    For extra fibre, use wholemeal pita bread.
