Mars Bar and banana pastries

    • 1 tablespoon castor sugar
    • 1 teaspoon cinnamon
    • 4 sheets filo pastry
    • 2 small bananas, thinly sliced
    • 1 Mars Bar, thinly sliced
    • icing sugar, to dust

    1 Preheat oven to 200°C. Lightly spray a baking tray with oil. Set aside.

    2 In a small bowl, combine castor sugar and cinnamon. Place one filo pastry sheet on a lightly oiled work surface. Sprinkle lightly with a little of the sugar mixture. Fold filo in half, spray with oil and sprinkle with more sugar. Fold in half again to make a rectangle. Place a quarter of the banana slices in the middle of the filo, leaving a 2cm border each side.

    3 Top with a quarter of the Mars Bar slices. Fold sides of filo over. Roll filo over so the join is underneath. Spray with oil and sprinkle with sugar. Repeat with remaining filo, sugar and filling to make 4 filo parcels. Bake for 12 minutes, or until crisp and golden.
