Pear and walnut bread

  • ¾ cup self-raising flour
    • ¾ cup wholemeal flour
    • ¾ teaspoon baking powder
    • ½ cup castor sugar
    • 2 medium bananas, mashed
    • 1 egg, lightly beaten
    • ¼ cup light olive oil
    • ¼ cup skim milk
    • 1 pear, peeled, chopped
    • 2 stalks rhubarb, thinly sliced
    • 1 tablespoon brown sugar
    • 1 teaspoon ground cinnamon
    • ¼ cup coarsely chopped walnuts

    1 Preheat oven to 190°C. Line a 21cm x 8cm loaf tin with baking paper.

    2 In a large bowl combine flours, baking powder and castor sugar. In a separate bowl combine bananas, egg, oil and milk. Fold into flour mixture then gently fold in pear and rhubarb.

    3 Spoon into prepared tin and sprinkle with brown sugar, cinnamon and walnuts. Bake for 1 hour or until an inserted skewer comes out clean. Stand for 5 minutes in tin before turning out on a wire rack to cool.

      Absolutely love making it. So easy and very tasty. Satisfies my sugar craving.
      More of a cake texture than bread. Whole family likes it.
