Fish saganaki with red pepper sauce

Make your next fish dinner a little more exciting! This recipe features tender white fish gently cooked in a rich tomato, roasted red pepper and fennel sauce.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1 tablespoon tomato paste
  • 400g can chopped tomatoes
  • 2 cups broccoli florets
  • 330g jar roasted peppers, drained and thinly sliced
  • 500g white boneless fish fillets
  • 150g feta, crumbled
  • 400g cooked brown rice, to serve

    1 Heat oil in a large frying pan over medium. Add onion and fennel. Cook, stirring occasionally, for 10 minutes.

    2 Stir through tomato paste, tomatoes, broccoli and peppers. Reduce heat to low and simmer for 15 minutes.

    3 Place fish fillets over the sauce, cover and simmer for 10 minutes, until cooked.

    4 Crumble feta over top and serve with brown rice.

    Serving suggestion

    Serve with wholemeal pita bread instead of brown rice.
