Kiwi Christmas tree

  • long skewer, for tree stem
  • ribbon, to decorate pot
  • small ceramic pot, shot glass, egg cup or small ramekin
  • large firm kiwifruit
  • 1 dried apricot
  • 6 small blueberries
  • 3 dates
  • lemon juice, to ‘glue’ decorations
  • long-thread desiccated coconut
  • desiccated coconut
  • coloured fruit such as strawberry, apple or red plum, for ‘presents’

    1 Thinly peel kiwifruit skin to leave as much kiwifruit flesh intact. Slice kiwifruit vertically in half.

    2 Cut a thick triangle from each kiwifruit half.

    3 Carefully insert a skewer through the wide base of 1 kiwifruit triangle then through the wide base of the other kiwifruit triangle. Leave a small amount of the skewer sticking out of the top (to attach star).

    4 Cut out an apricot star using a cookie cutter or carefully, use a knife. Push star through the top of kiwifruit skewer.

    5 Add dates to the base of pot for ‘soil’. Push kiwifruit skewer through the centre of dates and secure.

    6 Brush kiwifruit with a little lemon juice and secure blueberry decorations. Place pot on a small plate.

    7 Cut red fruit into present shapes and scatter around pot.

    8 Use long-thread desiccated coconut as tinsel and sprinkle other desiccated coconut onto plate as snow. Tie ribbon around pot for decoration.

    • Use flatter kiwfruit for easier handling.
    • Green kiwifruit work best as they hold their shape when cut.
    • These trees can be chilled for a few hours or eaten immediately.
