Berry clafoutis

  • ½ cup plain flour
  • ¼ cup castor sugar
  • 4 eggs
  • 30g reduced-fat spread, melted, cooled
  • 2 cups skim milk
  • 250g fresh or frozen mixed berries, such as blueberries, raspberries and blackberries icing sugar, to dust

    1 Heat oven to 160°C. Grease 6 x 1-cup capacity ceramic or glass baking dishes.

    2 Mix flour and castor sugar in a medium bowl. Whisk eggs, spread and milk in a separate bowl. Whisk egg mixture into flour mixture until batter is smooth and well combined.

    3 Divide batter among prepared dishes and scatter with berries. Put dishes in oven and bake for 25-30 minutes or until just set.

    4 Lightly dust berry clafoutis with icing sugar and serve.

    Serving suggestion

    Add a scoop of low-fat ice cream or low-fat custard to serve.

    Variations

    Make it gluten free: Use gluten-free flour and check icing sugar is gluten free.

    To make one large clafoutis, use a 6-cup ceramic or glass baking dish and increase cooking time to 40-45 minutes.
