Christmas vegetable medley

The perfect mix to serve with your Christmas filo crackers – roasted kumara mixed with red onion, served with a pea puree and sweetcorn niblets and seasoned with a sprinkling of nutmeg.

  • 1 (250g) small kumara, chopped in even chunks
  • 2 red onions, cut in wedges
  • spray oil
  • 1 cup frozen or fresh peas
  • 1 tablespoon oil
  • 1/3 cup cottage cheese with garlic and chives
  • sprinkling of nutmeg
  • 2 cups frozen corn

    1 Preheat oven to 190C. On a baking pan lined with baking paper place kumara and onions. Spray with oil. Cook in the oven for 45 minutes, tossing once, until golden and crisp.
    (You’ll add the Chicken filo crackers from the Christmas dinner on a budget menu plan 15 minutes into cooking time).

    2 In a microwave-safe bowl, cook peas in the microwave until tender. Mix in the oil and cheese and season with a little nutmeg. In a blender or with a stick blender, puree pea mixture with a little water until smooth. Adjust seasoning. Return to pan and keep warm until serving.

    3 Just before the main course is ready to serve, in a microwave-safe bowl cook corn in the microwave until tender.

    4 Serve veggies and puree with the Chicken filo crackers.

    Serve this recipe as part of the Christmas dinner on a budget menu plan.

    HFG tip

    If you have some garlic you can add some of this to the kumara and onions to roast.

    If you have any herbs in your garden such as rosemary or thyme, a few sprigs of this can be added to the kumara too.
