- 1kg washed potatoes, peeled and chopped
- ¼ cup skim milk
- 1 tablespoon wholegrain mustard
- ½ teaspoon ground nutmeg
1 Place potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat and cook for 15-20 minutes or until soft. Drain and return to pan.
2 Heat milk in the microwave on high for 1 minute.
3 Mash cooked potatoes until smooth. Add warm milk, mustard and nutmeg and stir to combine.
