Mixed vegetable quinoa

- 225g quinoa
- 1 tablespoon olive oil
- 400g stir-fry vegetables (we used Wok Creations)
- 1 teaspoon garlic purée
- 200ml vegetable stock
- 1 tablespoon tomato purée
- 1 lemon, juice

1 Cook quinoa following packet instructions. Meanwhile, heat a large non-stick pan with oil. Add stir-fry vegetables and garlic purée. Fry for 3-4 minutes.
2 Add drained quinoa, tomato purée, stock and juice. Heat through. Transfer to a serving dish and keep warm.
