  • 1 cup mixed dried fruit (we used fruitcake mix)
    • 1 cup All-Bran cereal
    • ½ cup brown sugar
    • 1 cup skim milk
    • spray oil
    • 1 teaspoon ground cinnamon
    • 130g (1 cup) flour
    • ½ teaspoon baking soda
    • 1 teaspoon baking powder
    • ⅓ cup skim milk

    1 In a bowl mix dried fruit, cereal, sugar and the first measure of milk. Mix well and set aside for 30 minutes.

    2 Preheat oven to 170°C. Spray a loaf tin with cooking spray. Sift dry ingredients and mix into bran mixture, gradually adding the second measure of milk until combined.

    3 Pour into prepared tin and bake in oven for 40-45 minutes until risen well. Remove and cool on a wire rack. Store for up to 1 week or freeze in slices.
