Trail bar bites

Chewy bite-sized balls full of flavour, with a date base and mixed with walnuts, cashews and almonds. A little extra sweetness added with dried pineapple and a sprinkling of coconut. Yum!

  • 1 cup medjool dates
  • ¼ cup walnuts
  • ¼ cup cashews
  • ¹/³ cup almonds
  • 1 tablespoon dried pineapple pieces
  • 1 tablespoon cacao powder
  • 1 tablespoon maple syrup
  • ¼ cup coconut thread

    1 In a blender, blitz all the ingredients together, except the coconut. Add a little water to loosen the mix if it’s to dry to form a ball.

    2 Using wet hands form into small balls. Flatten slightly and then toss in coconut. Place in the freezer.

    3 Remove from freezer at least an hour before eating. If you’re using these as travel snacks, pack in a sealed container or tin. Keep in a chilly bag.

    HFG tip

    You can double this mix and make up a larger volume and store in the freezer.

    These will keep in the freezer for up to a month.
