Cheesy tuna melt

  • 2 slices grainy bread
  • 1 tablespoon reduced-fat natural yoghurt mixed with 1 teaspoon Dijon mustard
  • 1 can flavoured tuna
  • ¼ cup grated Noble tasty cheese
  • 1 tablespoon finely chopped gherkins
  • parsley, to garnish

    1 Spread both pieces of bread with yoghurt mixture. Top one piece with tuna.

    2 Sprinkle over cheese, gherkins and parsley. Top with second slice of bread.

    3 Toast in a sandwich press or under the grill. Serve with salad and vinaigrette.
