Penne with lamb, olives and spinach

  • 400g wholemeal penne pasta
  • olive spray oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 400g lean lamb mince
  • ⅓ cup (80ml) red wine
  • 400g can chopped tomatoes
  • ⅓ cup sliced, pitted olives
  • 1 small bunch spinach, trimmed, leaves shredded

    1 Cook penne following packet instructions. Drain. Set aside.

    2 Heat a non-stick pan over a medium heat. Spray with oil. Add onion and garlic. Cook until onion is soft. Add mince. Cook for 5-6 minutes. Drain any fat.

    3 Add wine. Simmer until reduced by half. Add tomatoes and olives. Simmer for 5 minutes. Add spinach. Simmer for 2 minutes.

    4 Toss hot pasta with mince sauce. Divide pasta among serving bowls. Serve with parmesan cheese.
