Crispy low-fat roast potatoes

  • medium-sized potatoes (1 per serve*)
  • herb seasoning (we used Masterfoods Tuscan seasoning)
  • olive spray oil

    1. Preheat oven to 190°C.
    2. Peel then cut each potato into approximately 2-3 pieces. Place in a saucepan and cover with cold water. Bring to the boil and simmer for 10 minutes. Drain thoroughly. Toss in a little herb seasoning to cover evenly.
    3. Place potatoes in an ovenproof dish (large enough for them to be turned), spray with olive oil and toss to coat. Roast in oven for 1 hour 20 minutes to 1 1/2 hours until evenly golden brown, turning a few times during cooking.
