Papaya and almond porridge

Try this tropical flavoured breakfast for one. It's a tasty mix of fleshy fruit, crunchy nuts and creamy yoghurt!

  • ¹⁄³ cup rolled oats
  • 1 cup reduced-fat milk
  • ¼ teaspoon cinnamon
  • 1 cup diced papaya
  • 1 tablespoon sliced almonds
  • 1 tablespoon almond butter
  • 2 tablespoons reduced-fat plain yoghurt

    1 Place oats, milk and cinnamon in a saucepan and bring to the boil over high heat. Reduce heat to low and simmer for 3–4 minutes or until thickened. Stir through half the papaya.

    2 Spoon into bowl. Serve topped with almonds, almond butter, yoghurt and remaining papaya.
