Green goodness potato salad
Ingredients
- 800g baby potatoes, boiled and cooled, halved if large
- ½ cup frozen peas (defrosted)
- ½ cup frozen corn sweetcornX(defrosted)
- 1 small stalk celery, sliced
- ¼ cup Green goodness buttermilk dressing
- 2 teaspoons honey
- 2 teaspoons wholegrain mustard
- 4 hard-boiled eggs
- ½ cup roughly chopped fresh flat-leaf parsley, to garnish
- 1 tablespoon chopped fresh chives, to garnish

Instructions
1 In a large salad bowl place potatoes, peas, corn and celery.
2 In a small dish combine dressing, honey and mustard. Pour dressing over vegetables and gently stir to coat.
3 Arrange boiled eggs over the top of the salad and garnish with herbs. Chill until ready to serve.
