Green goodness potato salad

This creamy potato salad is high in protein and boosted with the goodness of fresh herbs.

  • 800g baby potatoes, boiled and cooled, halved if large
  • ½ cup frozen peas (defrosted)
  • ½ cup frozen corn (defrosted)
  • 1 small stalk celery, sliced
  • ¼ cup Green goodness buttermilk dressing
  • 2 teaspoons honey
  • 2 teaspoons wholegrain mustard
  • 4 hard-boiled eggs
  • ½ cup roughly chopped fresh flat-leaf parsley, to garnish
  • 1 tablespoon chopped fresh chives, to garnish

    1 In a large salad bowl place potatoes, peas, corn and celery.

    2 In a small dish combine dressing, honey and mustard. Pour dressing over vegetables and gently stir to coat.

    3 Arrange boiled eggs over the top of the salad and garnish with herbs. Chill until ready to serve.
