Pork and prawn noodles

Our low-calorie pork and prawn noodles are high in iron and fibre and can easily be made gluten free. This tasty dish is perfect for a midweek meal because it's ready in just 15 minutes!

  • 400g pork fillet, trimmed, sliced
  • 2 cloves garlic, minced
  • spray oil
  • 200g rice vermicelli noodles
  • 4 spring onions, chopped
  • 3 carrots, cut in matchsticks
  • 4 cups shredded Chinese cabbage
  • 2 cups edamame beans
  • 150g prawns
  • ¼ cup black bean sauce

    1 Spray pork and garlic with oil and set aside. Place noodles in a large bowl and pour over boiling water. Stand for 5 minutes.

    2 Meanwhile, spray a large frying pan with oil and place over a high heat. Add pork and garlic. Brown pork on all sides.

    3 Add vegetables and stir-fry for 3 minutes.

    4 Add prawns and cook for 2 minutes. Add black bean sauce and stir until heated through.

    5 Drain noodles. Divide among serving plates and top with stir-fry mix.

    Variations

    Make it gluten free: Use gluten-free black bean sauce.
