Barbecued courgettes with garlic and mozzarella
- 4 courgettezucchiniXszucchini, summer squashX
- 2 cloves garlic
- 1 onion
- ½ cup fresh mozzarella, sliced
1 Slice courgettes thinly lengthwise, and slice onion into thin slices. Chop garlic roughly.
2 Heat barbecue grill to a medium heat, and toss on veges. Keep them moving around for a few minutes, until courgettes and onions soften. Turn barbecue off and leave to cool for a few minutes. Then add mozzarella slices and toss everything together with tongs, so mozzarella melts slightly.
3 Garnish with salt and pepper, and serve straight away as a side dish with barbecued meat or fish.
