Broad bean, pea and mint dip

  • 200g peas
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ¼ cup fresh parsley
  • ¼ cup fresh mint
  • juice of 1 lemon

    1 Boil beans and peas until tender. Drain and run under cold water to preserve the colour.

    2 Remove shells from beans.

    3 Blend all ingredients and season to taste.
