  • ¼ cup fresh mint, plus extra to garnish
  • 1 teaspoon honey
  • 1 cup ice
  • 1 cup sparkling water
  • 330ml bottle lemon/ginger kombucha

    1 In two glasses, muddle lime, mint and honey until mint and lime release their juices and flavours.

    2 Divide ice between the glasses, top with sparkling water and kombucha.

    3 Garnish with extra lime and mint and serve immediately.
