

Orange, apricot and cashew bliss balls
Ingredients
- 1 cup pitted dates
- ¼ cup hot water
- 1 ¼ cup cashew nuts
- ½ orange, zest only
- ½ cup apricots, diced
- ¼ cup sultanasgolden raisinsX
- ¼ cup coconut thread

Instructions
1 Soak dates in hot water for 30 minutes.
2 Process all ingredients, except coconut, in a food processor (including water from dates).
3 Roll into balls. Roll balls in coconut. Place balls in paper cases (if desired), chill for 1 hour then serve.
