  • 1 ¼ cup cashew nuts
  • ½ orange, zest only
  • ½ cup apricots, diced
  • ¼ cup sultanas
  • ¼ cup coconut thread

    1 Soak dates in hot water for 30 minutes.

    2 Process all ingredients, except coconut, in a food processor (including water from dates).

    3 Roll into balls. Roll balls in coconut. Place balls in paper cases (if desired), chill for 1 hour then serve.
