Sugar snap peas salad
- 325g mangetout or sugar snap peas
- 100g bag mixed salad leaves
- 1 cucumber, peeled into ribbons
- 2 tablespoons snipped fresh chives
- 2 tablespoons balsamic vinegar
1 Blanch the mangetout or sugar snap peas in a pan of boiling water for 1 min or until bright green and tender-crisp. Drain in a colander, then refresh under cold running water.
2 Put the mangetou tor sugar snap peas in a bowl with the remaining ingredients and toss to combine, then serve.
