Rocket, white bean, squid and chorizo salad
Time to make: 20 mins
- 1 can cannellini beans
- lemon zest
- 1 teaspoon olive oil, plus a drizzle over the salad
- 1 clove garlic, crushed
- ½ red onion, sliced
- 2 chorizo sausages
- 1 squid tube, scored and chopped into squares
- few handfuls rocketarugulaX leaves
- lemon juice
1 Warm the cannellini beans with the lemon zest, olive oil, garlic and red onion.
2 Meanwhile, barbecue or pan-fry a couple of chorizo sausages and the squid. Slice the cooked chorizo.
3 Toss all the ingredients together with the rocket leaves, a good squeeze of lemon juice and a drizzle of olive oil. Enjoy hot or cold as a light meal or as part of a lunch platter.
