Salmon and asparagus soba noodles

  • 80g dried soba noodles
    • 1 teaspoon sesame oil
    • 5 spears asparagus or beans
    • 1 tablespoon mirin
    • 1 tablespoon lime juice
    • 1 teaspoon salt-reduced soy sauce
    • 1 teaspoon sweet chilli sauce
    • 95g can salmon, drained
    • 1 cup chopped cucumber
    • 1 cup baby spinach
    • ½ teaspoon sesame seeds

    1 Cook soba noodles following packet directions. Rinse under cold running water. Drain. Toss with a dash of the sesame oil. Set aside to cool completely.

    2 Blanch asparagus in boiling water for 1-2 minutes or until bright green. Refresh under cold running water. Drain.

    3 To make dressing, place mirin, lime juice, soy sauce, sweet chilli sauce and the remaining sesame oil in a small bowl. Stir to combine.

    4 Place cooled noodles, salmon, asparagus, cucumber, spinach and dressing in a large bowl. Toss gently to combine. Sprinkle with toasted sesame seeds. Serve immediately.
