Tortilla mince pies
(at time of publication)
- spray oil
- 400g lean beef mince
- 1 onion, finely chopped
- 400g can Delmaine ChickpeaGarbanzoXsGarbanzosX in Curry Sauce
- 1 cup corn sweetcornXkernels
- 4 extra-light flour tortillas
- ¼ cup grated reduced-fat cheese
- 200g curly kale, shredded
- 1 ½ cups grated (or sliced) mixed carrot and beetrootbeetsX
1 Preheat oven to 180°C and spray 4 x small pie dishes with oil spray. Cook mince in a non- stick pan with a little oil spray until evenly browned. Add onion and cook for 3-4 more minutes. If you prefer, add 2 cloves chopped garlic.
2 Add chickpeas with corn kernels. Heat for 5 minutes. Place 1 tortilla in each pie dish. Push down to mould properly and spray with a little oil.
3 Spoon mince into tortillas and sprinkle with cheese. Bake for 10 minutes or until cheese is melted.
4 Meanwhile, prepare salad by mixing carrot and beetroot together. Arrange kale on serving plates and top with other vegetables. Serve with tortilla pies, garnished with chopped fresh parsley.
For spicier pies add cumin and chilli to mince mixture.
