Vege sausage and tomato mash

- 5 large potatoes
- 1 onion
- 2 eggs
- 2 tablespoons fresh herbs (eg. basil)
- ½ cup sun-dried tomatoes in water
- 6 vegetarian sausages
1 Peel and cook potatoes. Mash and season with pepper.
2 Finely chop onion and soften in a pan in a little oil. Add to potatoes with eggs. Mix until smooth and creamy. Stir in herbs and chopped sun-dried tomatoes.
3 Spoon mixture into a non-stick frying pan sprayed with a little oil. Cook over a medium heat for 5-6 minutes either side, or shape mixture into 4 patties and cook.
4 Meanwhile, cook sausages in a non-stick pan. Cut potato in four, and serve with sausages and a mixed green salad.
