Baked cheesy mushrooms

  • 2 cups (200g) white button mushrooms
    • ½ cup grated fresh parmesan cheese
    • ½ cup reduced-fat ricotta cheese, crumbled
    • ¼ cup finely chopped fresh parsley

    1 Preheat oven at 250ºC.

    2 Remove mushroom stalks then make a small hole in the centre of each mushroom.

    3 Mix cheeses together and stuff mixture in each mushroom. There may be cheese left over.

    4 Grease an ovenproof baking dish with oil spray. Place mushrooms in prepared dish. Sprinkle over any leftover cheese mix and sprinkle top with parsley.

    5 Bake for about 12 minutes until mushrooms look golden- brown and cheeses bubble.
