  • 1½ cups peanut butter
  • 1 large egg
  • ¾ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon baking soda
  • 2 teaspoons orange zest
  • 1 tablespoon mixed peel
  • 50g dried cranberries
  • 85g dark chocolate, chopped into chunks

    1 Preheat oven to 180°C and line a baking tray with baking paper. In a large bowl, combine peanut butter, egg, sugar, spices and baking soda. Mix well. Add remaining ingredients and stir until just combined.

    2 Using hands, shape tablespoonfuls of mixture in balls and place on lined baking tray about 5cm apart.

    3 Bake for 10-12 minutes until lightly browned on top. Allow to sit in the oven for a few minutes, then remove to cool on a rack.
